Udhampur Kaladi

A reflection and representation of the essence of Dogra cuisine, kaladi is a local favourite, now finding its footing in the global market. Kaladi from Udhampur is considered as one of the world’s most unique cheeses, which is dried from the outside yet remains moist inside.

The produce

Traditionally, kaladi is made using raw, full-fat milk that is churned vigorously in an iron pot. Then, sour milk or curd known as mathar is added to the molten mass of milk solids to separate them. After being stretched, the cheese is cooled on the black iron pot and then put in a basin to harden. After the cheese is formed, it is sun-dried to aid in its moisture loss.
